Flax seed Apple Muffins

I picked up a bag of flax seed meal and found this awesome recipe, I did make a few changes, not many, and everyone was pleased with the results! Very moist and flavorful, better than a bran muffin and very nutritious.

1 1/4 c flax meal
2 tsp baking powder
1 tbsp cinnamon
1 tsp fresh ground nutmeg
1/2 tsp salt
1/4 c brown sugar
4 large eggs, lightly beaten
1/4 c oil
1/2 honey
1 tbsp vanilla
2 medium apples, finely chopped
Mix dry ingredients together, then mix in the wet. Let the batter set for ten minutes then fill 3/4 full paper lined regular muffin pan. Bake 20 minutes at 350 degrees. Makes 18 regular muffins.
You could tweek the spices and add cardamom, ginger, etc. You could switch out the apples and use pineapple, squash, etc. Make this recipe your own!

Twins! Or The birth of my first socks

I finally finished my first pair of socks, no they are not beautiful, but like any new mother, they are the most perfect socks in the world, except for all the mistakes, but I love them anyway!
I used Malabrigo sock yarn in Parisian Nights, and I was taking a toe up-two at a time-magic loop sock class, so these are very very basic. The birthing process was not painful, and I plan to birth many many more. So friends, if I email you with the request to measure your feet, just do it. That certainly won't be the weirdest request I've ever made of you!!
I can't leave replies at the moment, but to address and recap my wheat bread post: the bread was fantastic!! My husband said it was the best wheat bread he ever had, so I think the recipe is a keeper! Thanks Sue for the good advice and lecithin!!
Denise: I purchased my leaf lard and regular lard through my Coop, and was happy to be able to get it from organically raised pigs, but if I didn't have a coop, I would contact a small local pork producer and ask them to let me have or buy it the next time they slaughter. Some producers may just give it to you.
Carol: I've been thinking of you!!! Try the bread recipe, you will love it! Try something new on a regular basis, its very healing!

Cast your bread...

My friend Sue, graciously gave me some soy lecithin and some good tips for baking wheat bread.
She uses the lecithin, vital wheat gluten and citric acid to get lightness and a great rise out of her wheat bread.
I wanted to give it a try, and happened upon this recipe that surprise! It uses all three plus a pinch of ginger too. I also rendered some leaf lard yesterday. I love rendering lard, I am not sure why? Maybe its because I know what great pies I will make with it, or how good my eggs taste cooked with it! I even tried popping popcorn with it one time! It was just okay, I will stick with corn oil for popcorn :)

Old friends...new friends!!

Had lunch today with a good friend that I don't see often enough. We have such a good time together!
One awesome side effect of having been ostracized finally from that mean ol' stitch group has been that I'm able to spend time with people that want to spend time with me!! Up until recently, when the last one finally let go, I've felt as though people were just friends with me out of pity, obligation, neediness, etc. But, now, wow!! My real and true friends let me know that they like me for me, not because I will stitch, knit or complete some project for them, they don't keep me around to use me to make sure they get a birthday present or because there is no one else available to use. Today really made that point clear to me, although it was becoming clearer and clearer all the time. One thing I love love love about my current friends is that I can invite them to do something or whatever and they don't constantly make lame excuses, and they are all this way! All I have to do is suggest something and they jump on board!! Makes me feel good they want to spend time with me! Yes, its a small thing, but I'm embarrassed and mad at myself that I wasted years and income on friends that were self-centered users, when I could have been with people who know the real meaning of friendship. I know...same rant different day!! Just saying, I appreciate the people that appreciate me.
